I see this is set to planned. I dont find any tracks of Click & Collect in the Roadmap. Could you elaborate on this @jonas?
We are developing a Click & Collect solution for Shopware, however if this becomes a core feature we'd rather considering piggybacking on that.

Pick-up in store shipping method:
In my opinion, this is should be a core feature because plug-in can't cover all dependencies like flow builder, integration with various payment methods, compatibility with B2B Suite etc.
